What is Brown Sugar?

There are two types of brown sugar: light brown and dark brown. What makes them different is how much molasses they contain. Dark brown sugar contains fewer molasses than light brown sugar.

How to make brown sugar syrup

This recipe yields approximately 1 1/2 cups of syrup. The full recipe card is at the end of the blog post.

Here’s what you need:

1 cup water

1 cup brown sugar packed (light- or dark)


Add water and brown sugar to a small saucepan on medium heat. Stir until the sugar is completely dissolved (about 2 minutes). It is unnecessary to boil it, as boiling can make it thicker than needed for drinks.

You may find small pieces of brown sugar at the bottom of your saucepan. To speed up their dissolution, you can break them apart.

Once the mixture has dissolved completely, take it off the heat and allow it to cool. As it cools, it will begin to thicken slightly.

Place the syrup in an airtight container or bottle. Keep the syrup in the refrigerator for up to one month.

Use 1 tablespoon of sugar per cup to sweeten your teas, lattes, and cocktails. However, you can alter the amount to suit your taste preferences.
